How to Build the Perfect Bowl

Start at the bar
The first time people come in they usually stop for a second at the ingredient bar. It is a long counter of raw food, a stack of empty bowls and nothing at all telling you where to begin. Nobody minds — but here is what we would say if we were standing next to you.
The base goes in first
Noodles or rice, and there is no rule about it: most people take one, plenty take both. Then meat and seafood — chicken, beef, pork, prawns, tofu. Take what you will actually eat. The bowl is weighed before it is cooked, so a mountain of noodles you leave behind is a mountain you paid for.
Vegetables cook down by half
This is where most people under-fill. Broccoli, peppers, bok choy, red cabbage, mushrooms, corn, water chestnuts — they come off the grill at about half the volume they went on at, so pile them higher than looks sensible. It is the cheapest way to make the bowl bigger and the easiest thing to get wrong.

Sauce is the part that decides everything
There is a row of them at the end of the bar and the honest advice is two or three ladles rather than one. It has to coat everything once it hits the heat, and an under-sauced bowl comes back tasting flat. If you are not sure, ask whoever is on the grill.
